Sweet Potato Crostinis
These mouthwatering appetizers combine the earthy sweetness of baked sweet potato slices with creamy Brie cheese, flavorful Brussels sprouts sautéed in garlic and onion, and a hint of honey for that extra touch of love.
Ingredients:
- 1 long Sweet potato
- 7 oz Brie cheese
- 1 tbsp garlic minced
- 1 tbsp yellow onion minced
- ¼ cup chicken stock
- 1 cup Shredded brussels sprouts
- Honey for drizzle
- 2 tbsp unsalted butter
- Salt and pepper to taste
- Olive oil for tossing
Prepare Sweet Potatoes:
Peel the sweet potato and slice it into thin rounds.
In a mixing bowl, toss the sweet potato slices with salt, pepper, and a drizzle of olive oil until evenly coated.
Add Brie Cheese:
Once the sweet potatoes are tender, remove them from the oven and place small pieces of Brie cheese on each slice.
Return the baking sheet to the oven and bake for an additional 5 minutes or until the Brie cheese is melted and bubbly.
Prepare Brussels Sprouts:
While the sweet potatoes are baking, heat 2 tablespoons of unsalted butter in a skillet over medium-high heat.
Add minced garlic and onion to the skillet and sauté until fragrant.
Deglaze the skillet with chicken stock, then add shredded Brussels sprouts to the mixture.
Sauté the Brussels sprouts until they are tender and slightly caramelized.
Assemble Crostinis:
To assemble the crostinis, top each baked sweet potato slice with a spoonful of the sautéed Brussels sprouts mixture.
Drizzle honey over the crostinis for a touch of sweetness.
