Sheet Pan Loaded Chicken Gyros with Peppers, Onions, Fries & Tzatziki

Serves 4 servings

Ingredients

Main Sheet Pan

  • lbs boneless, skinless chicken thighs or breasts sliced into strips
  • 1 tbsp olive oil
  • 1 small lemon juiced
  • 2 tbsp plain Greek yogurt
  • 3 garlic cloves roughly chopped — not too small or it may burn
  • tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 2 tsp salt plus more for veggies
  • 1 tsp black pepper plus more for veggies
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • ½ red onion sliced
  • 1 container cherry tomatoes

Fries Sheet Pan

  • 1 16 oz bag frozen fries steak fries or crinkle cut recommended
  • olive oil spray or drizzle
  • oregano or Greek seasoning optional, for topping

Tzatziki (or use store bought)

  • 1 cup plain Greek yogurt
  • 1 small cucumber grated and squeezed dry
  • 1 garlic clove minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp chopped dill or ½ tsp dried
  • salt and pepper to taste

To Serve

  • warm pita or flatbreads
  • optional toppings: shredded lettuce, feta, parsley, hot sauce

Instructions

  • Marinate the chicken (quick method): In a bowl, mix sliced chicken with olive oil, lemon juice, yogurt, garlic, and all spices. Let sit while the oven preheats.
  • Preheat oven to 425°F.
  • Prepare sheet pans: Sheet Pan 1 — spread marinated chicken, sliced peppers, and onions across a large lined sheet pan. Don’t overcrowd, use two pans if needed. Sheet Pan 2 — spread frozen fries on a second sheet pan. Lightly spray or drizzle with olive oil.
  • Roast everything: Roast both pans at 425°F for 30–35 minutes. Toss the chicken/veggies halfway through for even browning. Flip fries if needed to crisp. Optional: broil the chicken for the last 2–3 minutes for extra char.
  • Make the tzatziki while it bakes: Mix all tzatziki ingredients together in a bowl and chill until serving.
  • Assemble gyros: Warm pita or flatbreads (I like to wrap stacks of 4-5 in a wet paper towel and microwave for 30 seconds). Load them up with roasted chicken, peppers/onions, crispy fries, a big dollop of tzatziki, and any extra toppings you love.
