On an electric griddle or in a large skillet saute onions on medium high heat until flagrant and soft, or 5 minutes.
Make equal sized balls of about 2 ½ inch in diameter with Jimmy Dean Sausage. On hot griddle place balls, then flatten with spatula as much as possible to create “smash” breakfast patties. Cook on each side for approximately 4 minutes or until there’s a nice sear on both sides.
Then at the same time, crack in two eggs on a griddle and place brioche slices onto toast. While bread toasts, season eggs with salt and pepper, throw a dash of water on them and cover with lid for 30 seconds to 1 minute
Assemble the sandwich and enjoy!
