  • 2 lbs chuck roast for boneless short ribs
  • 3 tbsp Avocado Oil
  • Salt and Pepper to taste
  • Half white onion finely chopped
  • 1/4 cup green onions or scallions thinly sliced
  • 1 tablespoon minced garlic
  • 1/2 tbsp smoked paprika
  • 1 tsp cayenne pepper adjust to your spice preference
  • 1 1/2 tsp ground mustard
  • 1 tsp fennel seeds
  • 3 cups beef broth
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1/2 tbsp Worcestershire sauce
  • 1 cup canned crushed tomatoes

Instructions:

    Season the Chuck Roast:

    • Begin by trimming any excess fat from the chuck roast. Cut the chuck roast into evenly-sized pieces to resemble boneless short ribs. Season the short ribs generously with salt and pepper on all sides. Allow the seasoning to infuse the meat for about 10-15 minutes while you prepare the other ingredients.

    Sauté the Short Ribs:

    • Set your Instant Pot to the "Sauté" function. Add 3 tbsp of Avocado Oil to the pot. Once the oil is hot, sear the seasoned short ribs on all sides until they develop a beautiful golden-brown crust. This step locks in the meat's juices and contributes to the rich flavor of the final dish.

    Create the Casian Flavor Base:

    • Add the finely chopped white onion, green onions, and minced garlic to the Instant Pot. Sauté the aromatic vegetables until they become soft and fragrant, infusing the base of our Casian fusion.

    Infuse with Spices:

    • Sprinkle smoked paprika, cayenne pepper, ground mustard, and fennel seeds over the onion and garlic mixture. Stir well to create a flavorful base that will infuse the short ribs with the perfect blend of Cajun and Asian influences.

    Add the Liquids:

    • Pour in the beef broth, soy sauce, sesame oil, and Worcestershire sauce. These liquids will further enhance the complexity of flavors in our Casian fusion. Stir well to combine all the ingredients.

    Pressure Cook:

    • Secure the lid of the Instant Pot and set the valve to the "Sealing" position. Select the "Manual" or "Pressure Cook" function and set the timer for 2 hours on high pressure. Allow the Instant Pot to work its magic, tenderizing the meat and infusing it with all the Casian flavors.

    Introduce the Crushed Tomatoes:

    • After the pressure cooking is complete, carefully release the pressure by moving the valve to the "Venting" position. Once the pressure is fully released, open the Instant Pot and stir in the canned crushed tomatoes. This addition provides a vibrant burst of umami to the dish, bringing all the Casian elements together in perfect harmony.

    Serve and Savor:

    • Your Instant Pot Casian Chuck Roast Short Ribs are now ready to be savored! Serve them over a bed of steamed rice or with your favorite side dishes. Garnish with additional sliced green onions for a pop of color and freshness.
