PCOS Friendly Hibachi Style Chicken Fried Rice

  • 1 lb chicken thighs
  • ½ cup carrot diced
  • ½ yellow onion diced
  • 3 green onions chopped
  • 4 cups cooked basmati rice preferably leftover rice cook about 1 ⅓ cup rice
  • 1 Tbsp toasted sesame oil plus ½ tbsp
  • 3 green onions chopped
  • 1 tbsp minced garlic
  • 3 large eggs
  • 1 tbsp mirin optional
  • 3 Tbsp low-sodium soy sauce
  • Salt and pepper to taste
  • Top with everything bagel seasoning or sesame seeds
