Cajun Dry Rub Wings Recipe | Mardi Gra Wings

Course: Appetizer, Main Course
Cuisine: American, Cajun, Creole
Keyword: Easy Chicken Dinner, Easy Recipe
Servings: 2

Ingredients

  • 2 lbs chicken wings
  • 1/2 tbsp oregano
  • 2 tbsp cornstarch
  • 1 tbsp onion powder
  • 2 tbsp smoked paprika
  • 2 tbsp freeze-dried garlic or garlic powder
  • 1 1/2 tbsp black pepper
  • 1 tbsp salt
  • 1/2 tbsp thyme
  • 1/2 tbsp rosemary
  • 2 tbsp yellow mustard
  • 2 tbsp Ranch ranch seasoning
  • 1/2 tbsp cayenne pepper

Instructions

  • Pat dry the chicken wings with paper towels.
  • In a small bowl, mix together oregano, onion powder, smoked paprika, freeze-dried garlic, black pepper, salt, thyme, rosemary, mustard, ranch seasoning, and cayenne pepper.
  • Rub the seasoning mixture all over the chicken wings, ensuring they are evenly coated.
  • You can let sit and marinate if you’d like (I didn’t lol)
  • Heat oil in a deep fryer or large pot to 375°F (190°C).
  • Carefully add the chicken wings to the hot oil in batches, ensuring not to overcrowd the fryer. For the second batch, you can slightly overload the fryer since the wings have already been partially cooked in the first batch.
  • Fry the wings for about 10-12 minutes or until they reach a minimum internal temperature of 165°F (75°C) and are golden and crispy.
  • Remove the wings from the oil and let them drain on a wire rack or paper towels.
  • Serve the wings hot with your favorite dipping sauce. Enjoy!
