Air Fryer Chicken Meatball Sub

Servings: 15 Meatballs

Ingredients

  • 2 lb Ground Chicken
  • 2 ½ cup Panko breadcrumbs
  • ½ cup All Purpose Flour
  • ½ tbsp Salt
  • ½ tbsp Pepper
  • 1 tsp Smoked Paprika
  • ½ tsp red chili flakes
  • ½ tbsp Thyme
  • ½ tbsp Garlic powder
  • ½ red onion minced
  • 1 tsp chicken bouillon
  • ½ cup Pepper Jack
  • ¼ cup fresh parsley minced
  • 4 eggs
  • Salt and pepper to taste (for seasoned flour)

Instructions

  • In a large bowl, combine ½ cup panko breadcrumbs, cheese, salt, pepper, smoked paprika, red chili flakes, thyme, garlic powder, red onion, chicken bouillon, parsley and 2 eggs.
  • Add in ground chicken and mix until well combined.
  • Form into even sized meatballs, about 2-inch size balls. Place on tray and refrigerate
  • Scramble eggs in a medium sized dish and then mix together breadcrumbs, flour and salt and pepper to taste in another medium sized dish
  • Remove meatballs from the fridge and dredge them in the order of egg to flour to egg to panko. Repeat until all of the balls are well coated.
  • Place on foil lined air fryer insert, being sure not to let them touch and cook at. 400 for 10-15 minutes
