From the Kitchen

Don’t overcrowd the pan — use two sheet pans if needed so the chicken and veggies roast instead of steam. Toss halfway through for even browning, and broil the chicken for the last 2–3 minutes for extra char.

Garlic: chop it roughly, not too small, or it may burn at 425°F.

Warm pita hack: wrap stacks of 4-5 in a wet paper towel and microwave for 30 seconds.

Tzatziki: grate the cucumber and squeeze it dry so the sauce stays thick. Store bought works too.

Why This Works:

Greek yogurt and lemon in the marinade tenderize the chicken and help it char at high heat, everything roasts together on two sheet pans, and a cooling cucumber-dill tzatziki balances the smoky paprika and cumin

Sheet Pan Loaded Chicken Gyros with Peppers, Onions, Fries & Tzatziki

Serves 4 servings

Ingredients

Main Sheet Pan

  • lbs boneless, skinless chicken thighs or breasts sliced into strips
  • 1 tbsp olive oil
  • 1 small lemon juiced
  • 2 tbsp plain Greek yogurt
  • 3 garlic cloves roughly chopped — not too small or it may burn
  • tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 2 tsp salt plus more for veggies
  • 1 tsp black pepper plus more for veggies
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • ½ red onion sliced
  • 1 container cherry tomatoes

Fries Sheet Pan

  • 1 16 oz bag frozen fries steak fries or crinkle cut recommended
  • olive oil spray or drizzle
  • oregano or Greek seasoning optional, for topping

Tzatziki (or use store bought)

  • 1 cup plain Greek yogurt
  • 1 small cucumber grated and squeezed dry
  • 1 garlic clove minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tbsp chopped dill or ½ tsp dried
  • salt and pepper to taste

To Serve

  • warm pita or flatbreads
  • optional toppings: shredded lettuce, feta, parsley, hot sauce

Instructions

  • Marinate the chicken (quick method): In a bowl, mix sliced chicken with olive oil, lemon juice, yogurt, garlic, and all spices. Let sit while the oven preheats.
  • Preheat oven to 425°F.
  • Prepare sheet pans: Sheet Pan 1 — spread marinated chicken, sliced peppers, and onions across a large lined sheet pan. Don’t overcrowd, use two pans if needed. Sheet Pan 2 — spread frozen fries on a second sheet pan. Lightly spray or drizzle with olive oil.
  • Roast everything: Roast both pans at 425°F for 30–35 minutes. Toss the chicken/veggies halfway through for even browning. Flip fries if needed to crisp. Optional: broil the chicken for the last 2–3 minutes for extra char.
  • Make the tzatziki while it bakes: Mix all tzatziki ingredients together in a bowl and chill until serving.
  • Assemble gyros: Warm pita or flatbreads (I like to wrap stacks of 4-5 in a wet paper towel and microwave for 30 seconds). Load them up with roasted chicken, peppers/onions, crispy fries, a big dollop of tzatziki, and any extra toppings you love.
